In the quiet of our Roastery, the transformation of green beans into what you know as our beautiful coffee is a delicate dance of time and temperature. It is where the science of heat meets the art of the palate.
Fast forward to those beautiful, roasted beans now on display at our Cafe.
You are standing in line, having your usual order on the tip of your tongue, when you see a bag that catches your eye.
It's a dark roast with deep notes of raspberry, chocolate, and molasses. Mmm.
But what makes a roast a dark one? Is there more caffeine? Do I drink it straight, or with milk? You ask.
As always, we have your back when it comes to coffee knowledge. And hey, we sure didn't know the full spectrum of each roast before opening the shop.
So, let's get into it.
The Light Roast
For those seeking a truly versatile coffee, a light roast offers a profile defined by floral notes, citrus, and in the case of our go-to Cafe drip and espresso offering, a milk chocolate delicacy.
We drop these beans from the roaster just after the "first crack" to preserve the unique characteristics of the high-altitude soil. This ensures the natural aroma of the bean remains the star of your cup.
Because these beans haven't been expanded by heat for as long, they remain denser than their darker counterparts and actually pack a slightly higher caffeine punch by volume.
This is a roast best enjoyed black, perhaps through a Chemex or a slow pour-over, where the nuance of the origin can truly shine.
However, we firmly believe you are in charge of how you enjoy your coffee. (Milk lovers, go for it!)

The Medium Roast
Next up, the medium goodness.
The medium roast is the balanced, middle path of our roasting process, characterized by comforting notes of caramel, toasted nuts, and smooth dark chocolate.
By roasting a bit longer, we round out the natural brightness and allow the sugars within the bean to begin their caramelization, creating a steady and reliable cup with a moderate caffeine level.
A medium roast provides enough body to hold its own with a splash of oat milk or cream, while remaining perfectly balanced when savored on its own.

The Dark Roast
And finally, we have arrived at the dark roast that caught your eye.
For the bold, the dark roast delivers a profile of dark chocolate, smoke, and a heavy, lingering body. In our current roastery lineup, you'll find layers of raspberry, molasses, and toasted marshmallow.
These beans are kept in the heat just to the point where the beans’ natural oils are released, allowing the bright origin flavors to take a backseat to the rich, toasted notes of the roasting process itself.
While the flavor profile is intense and robust, the caffeine content is actually slightly lower by volume, as the beans become less dense during their longer transformation.
This is the ideal choice for those who embrace straight, strong, and unapologetically black coffee. It also serves as a sturdy foundation for your French Press or home lattes, where the bold flavor will not be lost when mixed with milk.
