The symphony of flavors and uniqueness behind this coffee make it truly one of kind, because it actually is. Pergamino started out not as coffee exporters, but as growers. Pedro's father, Pedro Echavarria Sr, started to grow coffee in a small, abandoned farm in the 1970s. His lifelong passion for coffee developed quickly, and expanded his company to the town of Santa Barbara, where they now conduct the majority of Pergaminos production. Finca
Agualinda has been the heart of Pergaminos coffee growing operation since it was purchased in 2003. It was initially planted with the Castillo variety before they began the two-decade long journey of switching back to high quality varieties in the higher elevation parts of their farms. In Agualinda, they have been working hard for the past 4 years to convert to the Chiroso variety and develop a few exclusive lots above 1900 meters above sea level.
The Chiroso origins originate in Urrao, Antioquia and it is rarely seen outside the region. Made famous and grown by producers Jose Arcadio Caro and neighbor Doña Carmen Cecilia Montoya. Both famously would win top honors in the Cup of Excellence for several years in row putting Urrao on the map in 2014. The trees named
"Chiroso" as its cherries and seeds were much thinner and longer in appearance compared to
the traditional Caturra variety growing in the region. The variety became popular among producers in the region because of its ability to thrive under cold weather elements and its ability to shell out high productivity yields. The variety has now morphed and evolved into something pretty special. The last few years have seen a spike in Chiroso winning the top honors in 2020 by Felipe Henao Triana and two top 20 placements in the 2021 Colombia COE for Jose Arcadio
